Last night I was craving stir-fry, but I wanted to do something different than my traditional homemade teriyaki sauce. I looked in the fridge and saw the large pitcher of fresh-squeezed tangerine juice from my grandmother's citrus trees and an idea popped into my head. How about sweet and sour stir-fry? Last night was a LONG night. I received a swift reminder about WHY I don't consume caffeine anymore, and holy cow I guess I needed it. This week I celebrated my one year Veggie-birthday! woohoo! Okay, so maybe it's a little lame-o to celebrate the day I gave up meat, but truthfully this past year has been a journey for me in many ways, and I've truly grown. Last year I transferred to a vegetarian diet, and in the past few months primarily vegan diet, because my body feels really good when I eat this way. Will I eat this way forever? veggie love

I love collard wraps. I usually have a big bundle of collards in my fridge at all times and enjoy collard wraps several times a week. :) It makes a quick, easy and yummy lunch. Teriyaki Bean Stuffed Acorn Squash

I have most recently discovered my love for squash. It is yummy, comforting, filling, flavorful and versatile. I could eat squash everyday for two weeks, and have a different kind every day if I wanted. Winter Squash such as Carnival, Kabocha, Spaghetti, Butternut and Acorn have been suddenly appearing in my kitchen more frequently. In the past I tended to avoid squash. tragedy strikes Japan. tragedy strikes home.

Sometimes tragedy strikes when you least expect. I have spent the past week mourning the lives lost in the beautiful country of Japan. I have been meditating and praying over the people of the country. I have donated to disaster relief funds on their behalf. I have contacted all of my company's customers in Japan to ensure their safety. The tragedy has not dissipated. a little birthday bliss

I celebrated my 27th birthday on Monday. Woooooosh did that creep up on me. Last time I checked I was in my mid twenties and now I'm slowly approaching my late twenties. EEEEEEk! A back country skiing workout

I found a new favorite. For the first time ever I went back country skiing. Now, being from Florida this may seem like not much of a surprise that I've never been... but truthfully I grew up visiting family in the backwoods of Minnesota and spent several of my grade school years living out in Park City, Utah, so I've actually been on snow skis since I could walk.
