Miso soup and fresh ginger root

Miso soup and fresh ginger root

Tonight ended up being a very relaxing and enjoyable night. After finishing up a big presentation in school I came home, flopped on the couch, warmed up some leftovers and indulged in one of my fav shows--Glee! Yes, I said it, I'm a Gleek. I've said it before and I'll say it again. The show reminds me of the musicals and performances I took part in when I was a kid, and what can I say, I love the singing, the choreography and the slightly-ridiculous-yet-still-humorous plots. Plus Lea Michele is … [Read more...]

Put the carrot in the coconut…

Put the carrot in the coconut...

... and shake it all up! ;)I realize the blogosphere has been quite speckled with carrot-cakes eats this week, but alas, I haven't gotten my lil mini carrot cake muffins recipe posted yet so I might as well throw it out at the last minute.Although I came across LOTS of yummy carrot cake treats on my blog surfing, I decided to make up my own recipe for this one because I wanted to do something different. I've been cooking a lot with coconut oil in the past few weeks, as I mentioned in a previous … [Read more...]

Online shopping and Stir-fry eats

Online shopping and Stir-fry eats

Today I happily answered the doorbell to the UPS man! Yay! Packages! Love, love, love :) I was anxiously awaiting the arrival of my latest Ruelala purchase. First of all, if you haven't heard of Ruelala, shame on you! It is an online shopper's dream. They feature a select few designer boutiques each and every day with a limited number of items but at major discount prices. By limited number I mean the boutique opens at 11 am and sometimes popular items can be sold out by 11:30 am. But they tell … [Read more...]

Gimme Greens!!

Gimme Greens!!

After class today I made a quick stop at the Farmer's Market. I can't even begin to tell you how lucky I am to have a  daily market. The owners keep the stands open every day except Sunday, so if I'm ever in the need of anything veggie, that's always my first stop! And I was out of GREENS! But today they had some NEW stuff! yay!! I love new stuff :) One item included this awesome little lettuce package that came with 6 baby lettuce heads of different varieties. It caught my eye as soon as I … [Read more...]

Perfectionism and Food for Thought

Perfectionism and Food for Thought

I'm such a perfectionist. Arg. I tend to have a love-hate relationship with my perfectionism. Sometimes it really helps me out and I reap the rewards. Other times, I find myself enduring high opportunity costs as a result of my tedious and time-consuming perfectionism.  For example, today I spent all day on a paper that is only a fraction of my grade. Drafting, editing, redrafting...over and over. Ironically, I found out after I turned it in that I could have NOT DONE the paper and still gotten … [Read more...]

Veggie Fried Rice & Coconut Oil tid bits

Veggie Fried Rice & Coconut Oil tid bits

Life has been crazy lately, so I have felt slightly rushed in the kitchen. This can have its perks because it forces me to come up with meals that take very little time, which I think a lot of blog readers appreciate. But it can also be a little stressful! I had exactly 1 hour to prep, cook and eat before I headed to class, and this is what I whipped up. It turned out really yummy and even though I was rushed I was able to snap some pics so enjoy!Veggie Fried Rice Stuffed Portabella (Low-fat and … [Read more...]

Hot Ginger Baths

Hot Ginger Baths

I feel like I am counting down the hours until my semester is over. Not the days mind you, the hours. Oyyy the anticipation is killing me. But it feels so good to have one semester down and only a few more to go! Entering business school at the ripe age of 27 worried me at first because I couldn't imagine squeezing one more thing into my packed-to-the-brim life, let along full-time school! But I adjusted to make things work. I cut back my hours at work some, and moved out of my beautiful condo … [Read more...]

Orchid blossoms & black-eyed peas

Orchid blossoms & black-eyed peas

Today I was delighted to discover my first orchid flowering of the season! (It's the little things that do it for me sometimes). But really, I'm kind of proud of my meager orchid collection because I've had most of them for several years now and have gotten them through many flowerings. I've sort of grown attached to my orchid plants and each time they flower it puts a little skip in my step and a smile on my face. It's funny how Mother Nature can affect us like that.Ironically, in spite of the … [Read more...]

bridal shower tid bits

bridal shower tid bits

Today I got all gussied up and cute, packed up my lil chocolate vegan cupcakes and headed to my dearest friend's bridal shower! I'm throwing her another shower at the end of May but this was her family party, which I also got invited to. The theme was an English tea party, since her fiance is English. I'm really excited about this wedding because I've known the bride-to-be since I was in grade school and she's one of my closest friends. I snapped a couple of pictures because the decorations were … [Read more...]
