So I've been sort of slacking in my What I Ate Wednesday posts this month. My excuse is... I forget? I'm lazy? I forget to to take pictures of what I eat mostly... A wedding to remember

The wedding was fabulous! It was truly a weekend to remember. I watched my best friend walk down the aisle and marry the man of her dreams. I'm so thrilled I was able to be a part of their very special day, and here are a few photos to recap.Her dress was stunning and she was the most beautiful bride ever. I made some really yummy falafels a few weeks ago, after whipping up an eggplant hummus recipe for a guest post. (coming soon on one of my fav blogs and I'll let you know once it's up!) Bruschetta is one of my hands-down favorite munchie foods. It's a perfect appetizer or side dish, and it's easy to prep ahead of time for a dinner party. Whenever I'm out in Colorado I do a lot of baking. I hope everybody had a fabulous weekend like I did! I neglected my blog a bit because I was too busy enjoying this beautiful Colorado weather. Man-hunk and I spent all day Saturday and Sunday cleaning the sailboat and getting it ready to put into the water onto Lake Dillon. It's quite an intense process.
