Homemade Bruschetta & New Blog Domain

Bruschetta is one of my hands-down favorite munchie foods. It’s a perfect appetizer or side dish, and it’s easy to prep ahead of time for a dinner party. I have a couple of different recipes that I use for Bruschetta, but I have to admit that my mother’s recipe is my hands-down favorite. However, her’s is a little more complicated and requires several days of marinating in the fridge. Here is a recipe for my chunky tomato-basil bruschetta that is quick, easy and still delicious. Next week I plan on picking my mother’s brain a bit for her exact recipe, which I promise I’ll share! :)

Chunky Tomato-Basil Bruschetta
6 med. tomatoes
1/2 c. fresh basil, chopped
4 cloves garlic, minced
2 tbs. balsamic vinegar
2 tbs. lemon juice
1 tbs. agave syrup
salt and pepper to taste
1/4 tsp red pepper flake
1 baguette

1. Wash, prep and chop tomatoes. Chop into 1/4″ pieces and place into a colander to drain the juices. Remove from colander and place tomatoes in large mixing bowl.
2. Add chopped basil, minced garlic, lemon juice, balsamic vinegar, agave syrup and spices. Mix ingredients to combine.
3. Refrigerate for 30 minutes until tomatoes are chilled.
4. Slice baguette into 1/2″ slices and toast in 350 degree oven for about 10 minutes.

Soo delicious! I made this a few days ago and my man-hunk and I have been enjoying it as a pre-dinner appetizer. I like things a little spicy, which is why I included the red pepper flakes, but you can omit them if you have a more sensitive palate.

I’m enjoying my last couple of days in beautiful Colorado! It’s been wonderful trip but I’ll probably head back home to Sarasota after this weekend. I have some school assignments to turn in by the middle of next week and lots of last-minute wedding stuff to arrange with my best girlfriend who is getting married a week from tomorrow! Eeeps, I’m so excited for her! We have to do practice-runs on hair and makeup and finish off the center pieces. No biggie ;)

But before I head home, Adam and I plan on spending some more time with the horses and on the sailboat. The weather is just too amazing to stay indoors!

Also, I’m in the middle of changing my blog’s domain. The process takes a few days for everything to change over but my new domain will be http://www.greenfoodgreenthumb.com/, I figured I needed my own domain if I want to do more with my blog in the future, and the sooner I get on it, the better :) I’m still using blogger, although I’d like to get on a self-hosted wordpress eventually, but at least I’m under my own domain finally. If you are sweet enough to have me on your blog roll or sidebar please update it with my new link. I’d soooo appreciate it!! :) Speaking of blogrolls, I’m super irritated because it is the one thing that’s not showing up on either of my sites right now. I’m crossing my fingers and praying that within the next day or so it will transfer to my new site, but I’m kind of worried in the mean time…
