WIAW and guest blog posts

So I’ve been sort of slacking in my What I Ate Wednesday posts this month. My excuse is… I forget? I’m lazy? I forget to to take pictures of what I eat mostly… I focus my picture taking on new recipes instead. And more than anything, I can’t imagine why my food blogger friends would want to look at another bowl of oatmeal. Bahh whatever, THIS week I have some eats to share with you all.

Waffles! Really yummy ones. I usually eat about half this portion, but if I’m hungry enough to eat the whole thing, it’s definitely a rib sticker and will usually keep me full most of the day. But I’m a busy girl, so I like breakfasts like that. These waffles are topped with coconut butter and crumbled cashews. (The coconut butter I won in that fabulous giveaway sponsored by Alaina Rose @ Sweetness of Life.) Some other toppings I sometimes add include fruit, shredded coconut, jam, assorted nut butters, and maple syrup. So delish! I’m a waffle nut! I made a huge batch of these for the girls when we had our bridesmaid sleepover on Friday night. They went nuts! And you all know my go-to mix, right? This Bob guy really knows what he’s doin’, trust me!

I have two huge bags of carrots in the fridge so I’ve been drinking lots of sweet and delicious carrot juice.

My favorite recipe for carrots is about equal parts of carrots to fresh apples, with a small knob of ginger. Sprinkle a little cinnamon and nutmeg in afterwards, and you have a winner. So sweet and refreshing. Freshly juiced carrots don’t even compare to that store-bought stuff. I’ve heard bloggers call fresh carrot juice the gold mine of nutrients. It’s stocked full of Vitamin A, Vitamin E, Vitamin C, B Vitamins, calcium, copper, magnesium, potassium, phosphorus, iron and so much more. You really can’t go wrong with this stuff! Can you believe some of those horrid no-carb diets actually FORBID carrots!? Ridiculous. Whole carrots have all of the benefits of juice plus tons of fiber. Carrots have some natural sugars, but overall they are so good for you. Please indulge :)

And of course, my all time favorite, stir-fry! I probably have stir fry at least 3 times a week. Is that awful? hehe. But I don’t always use tofu, and sometimes I don’t even use a soy sauce base (well I use tamari). I indulge in tamari on occasion, because it is definitely high in sodium, and should be enjoyed in moderation. I sort of feel the same way about tofu and processed soy foods. I don’t avoid them, but I certainly don’t eat tofu all day everyday. I rely mostly on whole grains, beans, nuts and veggies for my protein and fiber. I turn to tofu and tempeh about once or twice a week. 

I’ve also been noshing on these little dessert balls of deliciousness all week. I whipped up this healthy and gluten free dessert recipe for a guest blog post over the weekend, and I was pleasantly surprised by how fabulous they turned out. They are packed full of fiber, nutrients and flavor!  Of course, I’d be hiding the facts if I didn’t admit to indulging in some sweet treats over the weekend. Our bridesmaid slumber party included some popcorn along with sweet champagne and strawberries. Movie of choice? Hairspray, the musical. Fabulous movie for a girl’s night in ;)

Tonight is dinner and a movie night with mama dearest. The bonus of having an out of town boyfriend? I get lots of girls time. haha. But, of course I still miss my man-hunk when I’m away.

  2. Yum. Your waffles look crazy good! i feel like going home, making some pancakes or waffles, and topping them with every treat in the cupboard. Instead of monster cookies, it would be monster waffles :)

  3. Oki, your eats looks AMAZING!! Especially that breakfats waffle with coconut butter! I would be so happy to wake up to that one!!
    I feel the same about soy- i dont eat much of it at all. Sometimes tofu, but Im not into fake meats and soy milk!
    And I love Hairspray! I had totally forgot about that movie, I def need to see it soon again :)

  4. Ahhhh!!!! I love Hairspray!!!! Do you just follow the instructions on the bag for your waffles? They look great!! :)

  5. For the most part I follow the instruction. But I usually put a lil bit less oil and I always use flax eggs instead of real ones. Which is equal parts water and ground flax seeds stirred. :)

  8. Those waffles look ah-mazing! I had fresh carrot/apple juice this morning and truly felt like I was drinking liquid gold. Love that stuff!

  9. How fun! I love girls' movie nights. The stir fry looks great, by the way. I could see myself eating that pretty regularly.
