Marinated Cauliflower

Hello blog world! I've been MIA this week because I was sort of in a blogging funk, so I decided to take some time away. And I'm okay with that! But I'm such a hypocrite because when some of the blogs I stalk love take a break from blogging, I'm always thinking come on, post already! So you see, it's a double-edge sword. But I digress... Even though fall is here, it still feels like summer in Florida. It's hot and muggy and I'd do just about anything to trade places with one of you all up … [Read more...]

Crispy Sweet Potato Fries

After several days of my nose being glued to my books, I've finally come out of my shell and back to reality! Three tests in three days, and each test was 1/3 of my grade for the entire class. How's that for freakishly annoying prime numbers? Arg! But there is a calm after the storm and I'm trying to ease into it. I had my bff girl over for a dinner and a movie night for some de-stressing! I made these freakin' fabulous pull-me-out-of-my-funk sweet potato fries that you really must try. I … [Read more...]

Sweet Barley Salad

One of my favorite indulgences is stopping by Whole Foods  for a quick lunch in between work and classes. I love it because I know their standards for quality whole foods ingredients, and it's pretty darn easy to find some delicious vegan and vegetarian options. As it so happens our local WF is smack dab in the middle of my school campus and my new internship, so you can see how I'm easily swayed. But my wallet is having trouble keeping up with my cravings, so I decided to make some of the … [Read more...]

Eating enough & healthy snacking

How does it make you feel when somebody tells you, you don't eat enough, or how can you eat so much!? Does it make you feel like you want to curl up in the fetal position and pick at the carpet in the corner of the room? Yeah, well that's how it makes me feel. Part of me wants to scream It's none of your damn business! And the other part of me wants to whimper if only you knew how much I have struggled with intuitive eating over the years... then you'd leave me alone. ::::sigh:::: I feel like … [Read more...]

What I Ate Wednesday link party

Sometimes Living Social makes me so incredibly happy. For example when they feature one of my favorite stores or vendors, like yesterday's feature--Whole Foods! But sometimes they really piss me off when it's a measly amount like $10 for $20 worth of goods. Arg. What's the deal!? But my $10 savings did buy me a glorious jar of organic pure maple syrup so I guess that's a score ;) But who can go into WF and come out with only a jar of maple syrup? Not this girl apparently. I also … [Read more...]

Star fruit in all its glory

After work today I decided to swing by the Famer's Market to snag some fresh fruit! I've become quite a fruit-eater lately. (Like multiple times a day, everyday.) I suppose it's because fruit is so easy to carry along to work or school for a snack, and the natural sugar content is a great pick-me-up during the morning and throughout the day. Plus it's so darn good for you it's ridiculous. When I'm buying fruit I try to go with what's fresh, local and in season. I grabbed a giant Florida … [Read more...]

Remembering 9/11 and being grateful

Today marks the 10 year anniversary of the tragic terrorist attacks on the World Trade Center. I spent my day in remembrance of the lives lost and the amazing sacrifices made by our American heros. I've enjoyed reading lots of blog posts dedicated to remembering this tragic day, and reading personal stories recalling exact whereabouts and realizations during the tragedy. I think September 11th will forever be memorialized, much like Dec 7th, 1941 --the attacks on Pearl Harbor. And it's memorials … [Read more...]

Chocolate coconut chia pudding

Time for another Chia seed pudding recipe! I promised to post this for you all in my last #WIAW post. Oh geez I just hash tagged without intending to. I'm such a dork. Obviously I've been tweeting too much this week. :/ This recipe is super easy to make, and full of some tasty nutrients like omega-3s, protein, fiber and more. It's sweet enough to be dessert, but healthy enough to be breakfast or a tasty snack, and uses minimal added sugar. Chocolate Coconut Chia … [Read more...]

Good Eats. Good Treats.

Hello lovlies! I hope you all had a fabulous labor day weekend! Even though I spent most of my labor day weekend laboring... grrr... I did get to squeeze in a little R&R and yummy eats! I had a huge sweet tooth this weekend, so I scooted my butt into the kitchen and did some baking. I don't exactly consider myself an expert baker, but I love it nonetheless. However, sometimes things don't turn out the way I plan... I tried making these cherry almond cookies from Vegan Cookies Invade Your … [Read more...]

The power of whole grains

When I try explaining to someone how I eat, sometimes I find myself at a loss for exact words. Words like whole grains, unprocessed foods, organic produce and foods free from sugars and dyes escape my lips, but I'm not always understood! What exactly do you mean by whole grains? You mean like wheat bread? That's a whole grain right? Ehhh... that's not exactly what I mean. Whole wheat bread may contain whole grains but it's still just a product of whole grains. And in order to qualify as a … [Read more...]
