Holy oatmeal, batman!

My oatmeal has wings.

And no, I don’t have children. I do things like this to entertain myself. :::mehehee:::

So why am I playing with my oatmeal? Maybe because the insane amount of hours I’ve spent this weekend studying contract law has started making me go a lil’ craaaaaazy! But don’t worry it’s all paid off. I can tell you the ins and outs and upside downs of legally binding contracts and promissory estoppel. <—-bonus points if you leave me a comment telling me what that means ;)

In all seriousness, I have fine-tuned a simple yet amazingly delicious oatmeal variation that has been feeding my belly quite regularly this week. I’ve got grandma on a new oatmeal kick and I promised her I could make her some oatmeal without any sugar (or butter!) and she would still enjoy it. I certainly lived up to the challenge.

Holy Oatmeal, Batman!

Ingredients:

1 c. dry rolled oats

2 tbs. dried cherries (or cranberries) 

3. tbs. dried and chopped apricots

1/4 tsp. cinnamon

pinch of nutmeg

1 tbs. toasted pepitas (pumpkin seeds)

huge scoop of almond butter (or nut butter of choice)

apple wings *not optional 

*Serves 2

1. Cook oats as directed. Add chopped fruit and spices while still boiling.

2. Cover dish and remove from heat.

3. After all the water is absorbed and oats are ready, garnish with pepitas, almond butter and apple slices.

4. Top with nondairy milk if desired.

I love adding dried fruit into my oatmeal while it’s still steaming. The fruit reconstitutes from the steam, and natural sugars sweeten up the oats. And little cinnamon and nutmeg spice really seal the deal!

Grandma has been doing really well with her healthy eating! So far she has lost 7 lbs. and says she feels really great. I’m so proud of her!

Did anybody dress up this year? Because of all my school work this was the first year in awhile that I did not dress up! Boo! But I still had fun seeing all of the cute costumes on the neighborhood kids. Most popular costumes of the year included: pirates, princesses and comic book characters. I sort of feel bad for all the parents that have to deal with kids on a sugar-high for the rest of the week. Eeps!

  1. this oatmeal looks so good. at this time I put pumpkin seeds on pretty much everything I eat, so why not on breakfast as well? yes, I dressed up as a green dino. it was fun ;) good luck on your tests!

  3. Ah! That oatmeal looks great! Have you ever tried steel cut oatmeal? I find that it keeps me full longer since it’s less processed.

    I will spare you what I know about promissory estoppel :)

    • I have tried steel cut oatmeal! I really like it! It definitely has a different texture, but I appreciate that it is more of a whole grain. My grandma bought a couple of pounds of rolled oats so we’ll have to go through those for now ;)

  6. Mmmm man those oats look so frick’n good!! I’ve been on an oat kick lately, but usually have time more time on the weekends to really dress my bowl up……….the possibilities are endless with a bowl of oats, just one of many reasons why I <3 them!

    • I’m know I’m quite obsessed with oats myself. I love that my grandmother has traded in her usual donuts and sugary cereal for a nice bowl of oatmeal! What a change, huh!?

    • Thanks girl! She is definitely staying on top of her new healthy eating and now she’s looking into getting a stationary bike or maybe joining a gym! I’m so proud of her and hope to keep her around as long as possible ;)

  9. That looks delicious. I love oatmeal and all combinations of it! Lately, I’ve been on a kick of using fresh mangos, unsweetened coconut, almonds, flaxseed, cardamom and cinnamon. Yummy!
