My Minnesota Christmas

DSC01903

I'm wrapping up my Minnesota vacation time, and about to head back to sunny Florida. Although we didn't have much snow this week, I still had a wonderful time celebrating the holidays with family, whom I only get to see a few times a year. Here are a couple of pictures highlighting the trip. My dad's house, all decked out for Christmas dinner. My brother Jay, opening presents on Christmas morning. Everyone in the kitchen, putting the finishing touches on Christmas … [Read more...]

Christmas dinner at Mom’s

DSC05565

Tonight is Christmas dinner at mama's house! I came over bright and early to start baking and helping out in the kitchen. I whipped up a vegan pineapple upside-down cake, and a variation on my chocolate banana bundt cake for dessert tonight. This bundt cake has a Christmasy twist, or as my mother would say, "Christmasish" <--- her favorite word. Tonight I used dark cocoa powder instead of regular, and used peppermint extract in the frosting instead of vanilla. I topped the cake … [Read more...]

Farmer’s market visit

The fall semester is over and things are also winding down with work, so I'm finding myself with more free time on my hands than I'm used to, but absolutely loving it! Enough free time that I can take off work early and squeeze in some Christmas shopping and a farmer's market visit with my mama dearest. But what would Christmas shopping be if I didn't scoop something up for myself along the way? Teehee... I'm so bad... but it felt so good, and just had to be done. My new Le Creuset oval … [Read more...]

vegan quinoa cakes

DSC05483

Ever since I picked up Heidi Swanson's latest cookbook, Super Natural Every Day, I've been dying to make quinoa cakes. Heidi has an easy looking recipe, that has been calling my name for weeks and weeks. Her recipe, along with every other one I stumbled upon within the blogosphere, is vegetarian, and still incorporates eggs. So I knew I had to try my hand at vegan quinoa cakes. But what a surprise to me when my first recipe trial turned out perfect. I literally squealed in delight when I took my … [Read more...]

Merry Christmas Cabbage & Kale

I think God had a sense of humor the day he created the pomegranate. I've never in my life experienced such a sweet, juicy and delectable fruit... that was so absurdly difficult to get at. (Although the coconut ranks high up there too). But all the hard work and time is usually worth it in the end. Health benefits of the pomegranate: Pomegranate seeds contain high levels of flavonoids and polyphenols--some pretty powerful antioxidants that fight free radicals and protect us … [Read more...]

Chia Rice Pudding

So I made dinner for a boy the other night.  Once a girl lets it slip to a guy that she loves to cook, experiment with new recipes and flavor combinations, and uses baking as the ultimate form of stress relief... she pretty much better step up her game in front of said male sometime in the near future. I'll spare you the juicy details of my cooking date, but I can't help but point out the ironic aspect of my night. As a girl who is pretty much obsessed with all things kitchen-ware … [Read more...]

Crockpot saves the day

DSC05431

There is something about the smell of a crock-pot meal wafting through the house that just makes me smile. In my humble opinion, the crock pot is pretty much the most ingenious invention ever. Dump everything into a pot, add water, a few spices, turn on a switch... and walk away! In a few short hours the sweet aromas fill the room. Crock pot meals come in especially handy when cooking a full meal is too time consuming and practically out of the question. Did I mention it's cram for finals week? … [Read more...]
