You know what they say about lemons… When life gives you lemons…

And once you try a Meyer lemon, you’ll never go back!
My boyfriend’s parents have this cute lil Meyer lemon tree that I’m pretty much obsessed with. In case you don’t know about these gems, they are the creme de la creme of all lemons. In other words, they’ll pretty much rock your socks off. They are sweeter and juicer than other lemon varieties, and are perfect additions to baked goods and desserts. They are also delicious in fresh juice!!
I saw a recipe for meyer lemon cupcakes with strawberry buttercream frosting while browsing Pinterest. I’ve never in my life tried homemade strawberry frosting, and it sounded like the perfect combination. I ended up using this vegan recipe for the Meyer lemon cupcakes and used Earth Balance instead of buttercream for the strawberry frosting. I added a few sprinkles and strawberries to make them pretty (and V-day festive!) I also made some vegan chocolate cupcakes and smothered both batches with the delicious strawberry buttercream. So yummy!
Vegan cupcakes tend to dry out a little more quickly, so be sure to keep them in an airtight container until you are ready to frost. The strawberry puree buttercream tends to melt after awhile, so I kept the frosting in a piping bag and frosted them right before they were devoured. My man was pleasantly surprised with my homemade V-day dessert!
I also added a lil Meyer lemon juice and extra agave syrup to some chia seed pudding. It turned out absolutely delicious! I omitted the spices and substituted a tsp of freshly grated lemon zest, as well as about 1/4 c. lemon juice for some of the liquid. It turned out slightly tart with a little sweetness. The lemon juice causes the almond milk to curdle a bit at first, but after it’s done setting in the fridge it’s hardly noticeable.
Why are lemons so good for you?

Pretty powerful stuff! I have heard from countless sources that a room temperature glass of lemon water every morning is one of the best ways to start your day, because it gets your digestive juices flowing and cleanses out impurities. I add fresh lemon juice to almost all of my juicing, because it helps for storing the juice and keeping it fresh.
Lemons are huge in Florida. Not just because they are grown here, but also because most city water has a mild chlorine taste, so nearly every restaurant offers lemon slices with the complimentary water to help disguise the taste! I only realized this when I got charged for lemon slices at a restaurant in the midwest, that was not accustomed to handing out free citrus. ha!
