Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! All of my family is up North this time of year, so I’ll be having my own quiet holiday (darn summer school kept me from getting up to Minnesota until August. bah!) But I am actually savoring a little relaxing solitude today. I just finished a huge accounting exam, so I can actually breathe for a few days until the new material starts.
I finally found my nemesis in the accounting world. Bonds. Hate them. Loathe them. My mug is laughing at my struggles… Grrrr!
I’m using today to relax and bum around the house, experiment in the kitchen, catch up on laundry and enjoy some kitty snuggles. I plan on going up to Tampa tomorrow after work to spend a nice long weekend with my sweetie. I do wish I could be with him today, but since I have to work on Thursday morning it didn’t make sense to make two Tampa trips back and forth this week with the ridiculous price of gas these days. So, relaxing solitude I embrace you.
This week I did a little crafting in the kitchen. I experimented with a vegan taco salad.
A bed of spinach and leafy greens, topped with a brown rice stir fry with yellow peppers, onions, black beans, corn and tomatoes (yumm!) flavored with a little cumin, paprika and red pepper flakes. Seriously one of the most delicious vegg dinners ever. Think this would be a hit for a dinner party or potluck too. (Note to self!)
Last night I made a huge batch of veg fried rice in my wok.
I used barley instead of brown rice, tons of fresh veggies, edamame (frozen and shelled), and a ginger, tamari, sesame seed and Sriracha sauce. I also added some crumbled flax Tempeh that I picked up from Whole Foods the other day. This is one of my man’s fav dishes, and it saves great in the fridge for leftovers throughout the week.
I wish I could make it out to Whole Foods more often, but sadly I only venture the 40 minutes drive about twice a month. It’s definitely a treat to hit up the hot bar and snag some of my fav packaged goodies. And no, we don’t have Trader Joe’s in Florida! :(
I can’t get away without raiding the hot/cold bar of course!
My Whole Foods trips are usually designed around my need for So Delicious coconut yogurt and Chia seeds, but of course I threw in a couple of extras ;) First time trying these Ezekiel 4:9 sprouted tortillas.
I’ve also been juicing a lot this week. It’s definitely a bit of a time crunch to fit in juicing with my crazy schedule, but I try to squeeze it in whenever I can. Hehe, juicing pun intended.
I also found a new use for my juicing pulp! My little uromastyx lizard Titi loves it!
Uros are very relaxed and sociable critters, quite similar to bearded dragons. They are originally from the Saharan desert and were introduced into the reptile pet trade within the last decade. I got Titi about 8 years ago when she was just a little lizard, and she’s been one of my favorite reptiles. She’s been staying with my mom for the past year (since I moved in with the grandparents last spring), but now that my mom has moved up to Ocala I’ve brought her to grandma’s and set her up on the patio. They thrive in super hot temperatures, and love fresh veggies and fruits, and dried lentils and split peas.
I’m also cat sitting for my mom while she makes the move. My mother’s ragdoll cat Sheeba has certainly tried to take over, but my kitties aren’t quite having it!
The territorial jealousy is thick in the air, and the occasional hissing and spitting from my cats is highly amusing. They also make sure to stake their claim in their favorite areas like my bed. heh. Whoever says cats aren’t fun pets should watch the show going down at my house this week. Cracks me up.
