Time for another Chia seed pudding recipe! I promised to post this for you all in my last #WIAW post. Oh geez I just hash tagged without intending to. I’m such a dork. Obviously I’ve been tweeting too much this week. :/
This recipe is super easy to make, and full of some tasty nutrients like omega-3s, protein, fiber and more. It’s sweet enough to be dessert, but healthy enough to be breakfast or a tasty snack, and uses minimal added sugar.
1/2 c. organic raw chia seeds
3 c. almond milk
1 frozen banana
1 1/2 tbs unsweetened cocoa powder
2 tbs. agave nectar syrup (or sweetener of your choice)
2 tbs. unsweetened coconut flakes
1. Combine frozen banana, almond milk, cocoa powder and sweetener in a blender. Blend until fully combined and banana is pureed.
2. Pour banana mixture into small mixing bowl and add chia seeds and coconut. Stir to combine.
3. Cover mixture with plastic wrap and refrigerate for 2-3 hours or overnights. For the first hour, stir pudding every 20 minutes or so.
4. Enjoy plain, layered in a parfait or in fresh fruit crepes! Garnish with shredded coconut or chocolate chips.
This stuff is seriously addicting. I pretty much have it in my fridge at all times these days! I really love this chocolate version but I think I’m still playing favorites with my banana raisin recipe. And I can pretty much guarantee you that I will be playing with a pumpkin variation sometime soon!
Speaking of pumpkin… fall is almost here! And fall is by far, my favorite time of the year. The only downfall is that I’m in Florida so we don’t really experience as drastic a change in the seasons, but it does start to cool down. No lovely shades of red, orange and yellow in the trees, blustery fall winds, or crunchy falling leaves on the ground, but I still make do. The appearance of the pumpkin spice latte at Starbucks is my mental marker that it’s okay to start whipping up pumpkin recipes in the kitchen, making craft store trips for pinecones and silk leaves to make pretty front door wreathes, and pull out the cinnamon apple spice potpourri centerpiece. Again… I’m such a dork. But I digress…
I’ve also had a lot of fun on Pinterest, pinning my little heart out with autumn and Christmas-inspired foods and recipe ideas. I just started pinning and I can’t get enough! I’m always the last person to figure something out when it comes to social networking but I’m really glad I finally caught on to pinning :) If you need an invite, let me know!
Although it smells like fall, it still feels a bit like summer. A couple of my orchids are in full bloom… This is one of my favorites. But I’m biased because it’s green. ;)
Believe it or not I would trade this for some blustery fall winds and sweater and boot weather. Yes, yes I would. But the cool weather doesn’t usually hit until late October. And even then, sometimes it doesn’t hit at all! There have been plenty of years where I’ve gone to the beach on Christmas Eve with friends and fam. Crazy as it sounds!
Off to bury my nose in the books.
