Do you ever wake up with a sweet tooth? Sometimes I wake up and crave something sweet and even chocolatey… so what’s a girl to do? Reach for a sugary processed chocolate-flavored cereal? I don’t think so! That’s where a chocolatey smoothie comes into play. And believe it or not this baby is still packed full of protein, fiber, nutrients and… pssst… spinach!
Chocolate Green Monster 3 c. fresh spinach 1 c. nondairy milk 1/2 c. soy vanilla yogurt 1 tbs. flax seed oil 2 frozen bananas 1 heaping tbs. unsweetened cocoa powder 1 tbs. agave nectar syrup *Yield: serves 2 Pile everything into a blender, starting with the greens on the bottom. Blend on high until completely blended and smooth. You can also add a scoop of peanut butter or chocolate flavored protein powder like SunWarrior for an extra protein kick! Delicious, nutritious, and tastier than any store-bought sweet cereal–promise! ;) After making homemade vegetable stock the other day I have been experimenting with small batches of a few different soup recipes. First, I tried out Mama Peas’ Un-toppable Black Bean Soup from her latest cookbook Peas and Thank You. It turned out absolutely fabulous! The secret is blending up some of the beans and broth for a thicker consistency. It was very thick, a little spicy and packed full of flavor. Mama Pea has loads of soup recipes on her blog, so check them out if you get a chance. I also mixed things up a bit and made a black bean vegetable soup with cabbage and kale. Black beans and kale go really well together and this one is for sure a repeat! Still fine tuning the recipe before I post it on here.
Another thing I’ve been using my homemade stock for is cooking rice and grains. (Just substitute veggie broth for the water and cook as usual.) It gives the grains just that little bit extra punch of flavor, and makes them that much better!
I remember when I used to make chicken flavored stock and my kitties would circle my feet in the kitchen begging for scraps. Even though these days my stock if flavored with veggies, the girls still think there is a treat for them in the huge pot on the stove. ha.
Have you guys seen the show on animal planet called My Cat From Hell? It’s sort of like a cat version of It’s Me or the Dog, and it is absolutely hilarious and crazy at the same time. Thank goodness my girls are amazing and never give me any problems… well, for the most part. Unless they decide to go exploring in high places and then can’t manage to fine their way down. Arg! I don’t even know how she got up here but getting her down was a little tricky and resulted in a few scratches. :/ But they are like my children and I can’t possibly stay mad at them for long.
