Christmas dinner at Mom’s

Tonight is Christmas dinner at mama’s house! I came over bright and early to start baking and helping out in the kitchen. I whipped up a vegan pineapple upside-down cake, and a variation on my chocolate banana bundt cake for dessert tonight.

This bundt cake has a Christmasy twist, or as my mother would say, “Christmasish” <— her favorite word.

Tonight I used dark cocoa powder instead of regular, and used peppermint extract in the frosting instead of vanilla. I topped the cake with crushed peppermint candies for a festive look.

My mom’s house is decked out in tinsel and lights, and the kitties are loving it! I brought the girls over so my mom can watch them while I’m up north in Minnesota next week.

I even dressed them up with with lil red bows for dinner tonight. #crazycatlady at her finest ;)

T’was the night before Christmas and all through this Florida town,
no noses were frozen, no snow fluttered down,
no children in flannels were tucked into bed,
they wore tank tops and shorty pajamas instead.

To find wreaths of holly, t’was not very hard,
for holly trees grow in every back yard.
In front of the houses, most Dads and Moms,
were adorning the bushes and coconut palms.

The sleeping kiddies were dreaming in glee,
hoping to find SCUBA gear and water skis under the tree.
They all knew that Santa was well on his way,
in a Mercedes-Benz, instead of a sleigh. (source)

hehe. I admit, Florida Christmases are a bit different, but we still get by!
