Vegan Chocolate Banana Muffins

RipeBananas-1-copy

I am a huge fan of bananas. It's safe to say I enjoy a banana or two every day. Whether it's for a quick on-the-go snack, added to smoothies, smothered in nut butter, whipped up in the food processor for banana soft serve, added to chia pudding, or snuck into baked goods... I'll put a lil nana in just about anything! But I'm kinda weird when it comes to bananas. I do not enjoy them very ripe. In fact, I prefer them with a lil green around the edges, and absolutely no brown spots! blah! But … [Read more...]

Blueberry pickin’ is the life for me

I should be celebrating!!  Tax season is officially over and I can finally breathe again. Hahaha, just kidding, actually my boss is the one who can breathe again. But I have a feeling I will be uttering these words many many times throughout the course of my life! My favorite part is that another semester is almost over, which means I'm getting closer and closer until the end! I could be sitting for my CPA exam as early as next summer. My how the time has flown by. When I first decided to go … [Read more...]

Happy Easter Weekend

Happy Easter! I can't believe we just finished Easter weekend! Spring has flown by and now summer is peaking around the corner. Florida days are becoming increasingly hotter, which makes me even more happy to have finally caved in & rejoined a gym, so I don't have to even think about exercising in the heat! I decided to join Lifestyles last month on their passport membership, so I can work out at all of their locations. Which means when I'm up in Tampa with my sweeti we can go to his gym, … [Read more...]

A little lemon goes a long way…

DSC05637

You know what they say about lemons... When life gives you lemons... grab a bottle of tequila and celebrate! hehe And once you try a Meyer lemon, you'll never go back! My boyfriend's parents have this cute lil Meyer lemon tree that I'm pretty much obsessed with. In case you don't know about these gems, they are the creme de la creme of all lemons. In other words, they'll pretty much rock your socks off. They are sweeter and juicer than other lemon varieties, and are perfect … [Read more...]

Christmas dinner at Mom’s

DSC05565

Tonight is Christmas dinner at mama's house! I came over bright and early to start baking and helping out in the kitchen. I whipped up a vegan pineapple upside-down cake, and a variation on my chocolate banana bundt cake for dessert tonight. This bundt cake has a Christmasy twist, or as my mother would say, "Christmasish" <--- her favorite word. Tonight I used dark cocoa powder instead of regular, and used peppermint extract in the frosting instead of vanilla. I topped the cake … [Read more...]

Chia Rice Pudding

DSC05443

So I made dinner for a boy the other night.  Once a girl lets it slip to a guy that she loves to cook, experiment with new recipes and flavor combinations, and uses baking as the ultimate form of stress relief... she pretty much better step up her game in front of said male sometime in the near future. I'll spare you the juicy details of my cooking date, but I can't help but point out the ironic aspect of my night. As a girl who is pretty much obsessed with all things kitchen-ware … [Read more...]

This week I’m loving…

DSC05343

Well since I'm behind in blogging I'll just give you all an update! This week I'm loving... Gorgeous Florida fall weather. It seriously can't be beat. Fall weather doesn't really hit us until November, so the cool nights and breezy fall days have just started creeping in... and I love it! An excuse to wear cute sweaters? Yes please! Year-round fresh produce! My dad always complains during this time of year when the Minnesota Farmer's Markets shut down and he has to hit up the grocery … [Read more...]

Hey guys! Come check out my guest post on Frosting for the Cause, along with a yummy recipe for vegan cherry and maple cookies! October is breast cancer awareness month and there isn't a more perfect time to acknowledge the hundreds of thousands of people around the world suffering from this terrible disease. Part of my agreement with Frosting for the Cause is that I'll be donating these cookies to a local cancer hospice. This first batch disappeared quickly in my house so I'll be making 4 … [Read more...]

Chocolate coconut chia pudding

DSC04986

Time for another Chia seed pudding recipe! I promised to post this for you all in my last #WIAW post. Oh geez I just hash tagged without intending to. I'm such a dork. Obviously I've been tweeting too much this week. :/ This recipe is super easy to make, and full of some tasty nutrients like omega-3s, protein, fiber and more. It's sweet enough to be dessert, but healthy enough to be breakfast or a tasty snack, and uses minimal added sugar. Chocolate Coconut Chia … [Read more...]

Good Eats. Good Treats.

DSC04945

Hello lovlies! I hope you all had a fabulous labor day weekend! Even though I spent most of my labor day weekend laboring... grrr... I did get to squeeze in a little R&R and yummy eats! I had a huge sweet tooth this weekend, so I scooted my butt into the kitchen and did some baking. I don't exactly consider myself an expert baker, but I love it nonetheless. However, sometimes things don't turn out the way I plan... I tried making these cherry almond cookies from Vegan Cookies Invade Your … [Read more...]
