Vegan Chocolate Banana Muffins

RipeBananas-1-copy

I am a huge fan of bananas. It's safe to say I enjoy a banana or two every day. Whether it's for a quick on-the-go snack, added to smoothies, smothered in nut butter, whipped up in the food processor for banana soft serve, added to chia pudding, or snuck into baked goods... I'll put a lil nana in just about anything! But I'm kinda weird when it comes to bananas. I do not enjoy them very ripe. In fact, I prefer them with a lil green around the edges, and absolutely no brown spots! blah! But … [Read more...]

Summer School I Abhor You

brunch

Summer school has begun... dun dun dun. And I have senselessly packed my summer schedule with more classes than I can realistically handle. But alas, too late now, I'm just going to give it my best shot and run with it. Summer school is crazy because they pack an entire semester (about 16 weeks) worth of material into a condensed summer period (6 to 10 weeks, depending on the course). So instead of 1 or 2 chapters a week, each class covers 2, 3 or even 4 chapters a week. A WEEK! Oh yes, and … [Read more...]

Cinco de Mayo libations & celebrations

333

This weekend was celebratory! College graduates around the country finally celebrated their years of hard work paying off, followed by plentiful Cinco de Mayo Festivities! You couldn't ask for a more celebratory weekend! ;) My sweet and beautiful cousin Sarah graduated this weekend. So proud of her! After catching up on numerous chores and work, I headed to Tampa for the weekend to celebrate Cinco de Mayo (and our semester being over!) with my sweetie. We hit up Ceviche restaurant in … [Read more...]

Movin’ on up!

2

Oh Blog land I've missed you these past few weeks... What happens when you leave your Mac pro charger at your boyfriend's house up in Tampa on a Sunday night? Well, I'll tell you what happens. Your Mac pro dies around Monday evening and sputters its last lil breath. And then you are without your precious laptop until the following weekend when you can venture back up to Tampa to see your sweetie and reclaim your laptop charger. Story of my life. I hated being without my laptop all week, … [Read more...]

Blueberry pickin’ is the life for me

I should be celebrating!!  Tax season is officially over and I can finally breathe again. Hahaha, just kidding, actually my boss is the one who can breathe again. But I have a feeling I will be uttering these words many many times throughout the course of my life! My favorite part is that another semester is almost over, which means I'm getting closer and closer until the end! I could be sitting for my CPA exam as early as next summer. My how the time has flown by. When I first decided to go … [Read more...]

Happy Easter Weekend

pic3

Happy Easter! I can't believe we just finished Easter weekend! Spring has flown by and now summer is peaking around the corner. Florida days are becoming increasingly hotter, which makes me even more happy to have finally caved in & rejoined a gym, so I don't have to even think about exercising in the heat! I decided to join Lifestyles last month on their passport membership, so I can work out at all of their locations. Which means when I'm up in Tampa with my sweeti we can go to his gym, … [Read more...]

A Birthday Road Trip!

DSC05684

I had a truly fabulous birthday celebration last weekend! It just so happened that my birthday fell smack dap in the middle of my spring break, and my sweetheart of a man had some time off as well, so we took a mini vacay! We headed over to Florida's east coast to visit St. Augustine, one of the oldest continually occupied European settlements in North America. It's a quaint little town full of character. Downtown historic St. Augustine has winding cobblestone streets dotted with old victorian … [Read more...]

Mom’s birthday at Columbia Restaurant

gal_food_03

Last weekend was my amazing mama dearest's birthday! We all rallied and headed up to St. Petersburg pier for a relaxing and quiet evening at The Columbia Restaurant, a family favorite. One of Florida's oldest restaurants, dating back to a small pub in 1905, the Columbia is still family-run (5th generation!) It has blossomed into an extravagant and decadent dining establishment, serving top-quality Spanish and Cuban cuisine, with 5 Florida locations. They offer a delicious assortment of … [Read more...]

Vegan-friendly dining out

DSC05600

I used to feel like I should wear a warning label. For times like these... Male suitor: Can I take you out to dinner? Me: Sure. As long as it's vegan-friendly. Male suitor: Huh? You serious?  See, a warning label would have come in handy, don't you think? In the dating world, individual tastes and preferences in food choices can be a difficult battle--especially when you are a plant-strong-green-juicing-vegan-food-lover like myself. But ever since I started following a healthier lifestyle I … [Read more...]
