Veggie pasta & homemade pesto

DSC05296

Thank you all for your sweet comments on my last post! Getting grandma into gear with healthier eating habits has been quite a rewarding experience (in just a week!). So far she is really sticking to the meal plans and snacks I've suggested (although I've still given her a lot of freedom to make her own choices). She's also doing a great job with her food journals! We sit down every few days and go over her food groups. She has increased her veggies and whole grains by several servings each day, … [Read more...]

This is what happens…

DSC05277

This is what happens when a greens-lover discovers a local hydroponic picking farm with all-you-can-pick greens. She goes buck-wild. And the last time I did anything buck wild was probably college, so that's saying a lot. ;) I used to buy greens by the bunch. Now I hoard buy them by the pound. At around $1.50 a pound, I stock up until my little heart is content. Since the farm is about an hour drive for me, I'm sticking to bi-weekly trips. And this time around guess what was finally … [Read more...]

The power of whole grains

DSC04938

When I try explaining to someone how I eat, sometimes I find myself at a loss for exact words. Words like whole grains, unprocessed foods, organic produce and foods free from sugars and dyes escape my lips, but I'm not always understood! What exactly do you mean by whole grains? You mean like wheat bread? That's a whole grain right? Ehhh... that's not exactly what I mean. Whole wheat bread may contain whole grains but it's still just a product of whole grains. And in order to qualify as a … [Read more...]

Coconut Curry Rice and some north woods views

Coconut Curry Rice and some north woods views

There is something about a walk through the woods that makes me feel incredibly peaceful. It's a combination of the sights, the sounds and the smells that are so alluring. I wish I could capture that smell in a bottle and take it home with me :) Although I'm sure most of you would say the same thing about the sweet and salty sea shore that I call home! And you sure can't beat this gorgeous bike path! I take advantage as much as possible on my visits :)Makes you want to keep walking forever, … [Read more...]

Curry Chic Pea “Chickn” Salad and vacation bliss

Curry Chic Pea "Chickn" Salad and vacation bliss

It's been so long since I've posted a recipe on here that I almost forgot what kind of blog this is! ;) I've been cooking up a storm this week, since I have lots of free time and a huge and gorgeous kitchen to cook in at my father's cabin. So far I've been making lots of yummy vegan eats and my family has been loving everything. Today I made chic pea "chickn" salad for lunch and a huge crock pot of chili for dinner followed by some coconut chocolate chip cookies for dessert. My brothers and … [Read more...]

Coconut curry stir fry!

Coconut curry stir fry!

I love curry. There is something about the slightly sweet and yet spicy combination in curry dishes that just tickles my palate. There are so many different types of curry, that the possibilities for cooking with curry are endless! I have just started exploring curry more recently. Believe it or not, I used to think I was allergic to the stuff! When I was a kid I always had a swollen and scratchy throat when I ate my mom's chicken curry dish. But somewhere in early adulthood I tried curry again … [Read more...]

Falafel patties and new shoes!

Falafel patties and new shoes!

I made some really yummy falafels a few weeks ago, after whipping up an eggplant hummus recipe for a guest post. (coming soon on one of my fav blogs and I'll let you know once it's up!) I had an exorbitant amount of freshly made hummus and I knew there was no way I could eat all of it within the week, so I threw in some bread crumbs, onions and spices, and pan-seared a few falafel patties. They turned out really delicious!First of all, what is a falafel? A falafel is a patty made from ground … [Read more...]

happy monday! Some sailing & vegan lasagna

happy monday! Some sailing & vegan lasagna

I hope everybody had a fabulous weekend like I did! I neglected my blog a bit because I was too busy enjoying this beautiful Colorado weather. Man-hunk and I spent all day Saturday and Sunday cleaning the sailboat and getting it ready to put into the water onto Lake Dillon. It's quite an intense process. Aside from washing, waxing, and some basic repairs and maintenance, the process of stepping the mast, getting the boat off the trailer into the water and putting the sails back on is LOT of … [Read more...]

Homemade marinara and vacation R&R

Homemade marinara and vacation R&R

Up until a couple of years ago, I was an avid fan of store-bought marinara sauce. Its easy, it's decently good, and it sure beats the work of the homemade variety. But the really good organic jars are kind of pricey. That's when I discovered that it's pretty easy, and a lot cheaper, to make your own "slightly-homemade" marinara using jars of plain organic tomatoes and some trimmings. Plus, the taste is sooo much better than anything store-bought. This is my go-to recipe for homemade marinara. … [Read more...]
