It's been three weeks since our getaway weekend in Ocala, and each week has been jam packed for me. My work and school schedule is probably the craziest it's ever been this fall semester! I'm working more hours at the accounting firm, and taking four night classes during the week. So each day is pretty much a 7 am wakeup, head to work by 8:30, go straight to class after work, and finally head home around 9:30 pm. It's a bit insane! Sesame Ginger Cabbage Slaw

This coleslaw is mostly raw, packed full of delicious cancer-fighting nutrients, fiber and protein-packed edamame. It has an orange juice, ginger and vinaigrette dressing that leaves it low-fat and low calorie. It's also gluten free and mostly raw. This recipe is amazing. I sort of threw everything together one afternoon for a refreshing low-fat coleslaw, and I discovered it to be even better tasting after marinating in the fridge overnight. Enjoy! Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! Some new (to me) stuff I've been digging lately... EOS-Evolution of Smooth Lip Balm I really love this stuff! All natural and mostly organic ingredients! It does contain Beeswax (FYI vegans) but EOS does not test on animals which is what I am more concerned with. Summer School I Abhor You

Summer school has begun... dun dun dun. And I have senselessly packed my summer schedule with more classes than I can realistically handle. But alas, too late now, I'm just going to give it my best shot and run with it. Summer school is crazy because they pack an entire semester (about 16 weeks) worth of material into a condensed summer period (6 to 10 weeks, depending on the course). Crockpot saves the day

There is something about the smell of a crock-pot meal wafting through the house that just makes me smile. In my humble opinion, the crock pot is pretty much the most ingenious invention ever. Dump everything into a pot, add water, a few spices, turn on a switch... and walk away! In a few short hours the sweet aromas fill the room.
