A lil prep work

lunch

It's been three weeks since our getaway weekend in Ocala, and each week has been jam packed for me. My work and school schedule is probably the craziest it's ever been this fall semester! I'm working more hours at the accounting firm, and taking four night classes during the week. So each day is pretty much a 7 am wakeup, head to work by 8:30, go straight to class after work, and finally head home around 9:30 pm. It's a bit insane! I'm trying my best to keep up my healthy eating habits and hit … [Read more...]

All natural & organic beauty products

One of my favorite finds on our St. Augustine trip was a tiny lil all-natural & organic bath and body shop called Hickory Ridge Organics. All of the products are vegan, and homemade locally in St. Augustine. We found the shop sandwiched in between a bunch of tacky tourist shops in the middle of downtown. The sweet smell of eucalyptus and jasmine flower immediately drew me into the store! I could have easily dropped an entire paycheck in this shop. The shelves were lined with homemade … [Read more...]

A little lemon goes a long way…

DSC05637

You know what they say about lemons... When life gives you lemons... grab a bottle of tequila and celebrate! hehe And once you try a Meyer lemon, you'll never go back! My boyfriend's parents have this cute lil Meyer lemon tree that I'm pretty much obsessed with. In case you don't know about these gems, they are the creme de la creme of all lemons. In other words, they'll pretty much rock your socks off. They are sweeter and juicer than other lemon varieties, and are perfect … [Read more...]

Visit from dad, hydroponic farm trip

This past week I had 4 exams in 5 days. That's... insanity right? Perhaps the professors all whispered behind my back to see how they could possibly make my life a bit more stressful than it already is!?  Ugh! So I've definitely let my blogging slack recently, but as you can see I've had good reason! But my exams are finally over,  so I have a bit of breathing room now! This weekend I got a surprise visit from my dad, who lives up in Minnesota with my step-mom and brothers. I was really … [Read more...]

Shedding that holiday weight gain

There are three little words that I loathe. Three little words that will make most people retaliate with rock-solid New Years resolutions, promises to do better, do more, and push harder. Three little words that are practically unavoidable--at least for me. Holiday Weight Gain. Blah. As someone who follows a wholesome plant-based diet, and makes taking care of her body a top priority (I even got the oh-so-sweet compliment from my man earlier this week "You are probably the healthiest … [Read more...]

Post-op update

2012-01-04-13.41.17

Hello lovelies! My knee surgery went quite well on Wednesday, and I thought I'd give you all a bit of an update and share some of the good and (ehhh) not-so-good highlights. Since this was my second surgery for my PVNS (Pigmented Villonodular Synovitis), I went into it with a rough idea of what to expect beforehand and throughout the recovery process. The surgery was outpatient, so I was in and out within a couple of hours. I was scheduled for 2 pm, but they requested I be in at 12:45 to get … [Read more...]

Road to Recovery

Female_runner_silhouette_is_mirrored_below_with_a_soft_pastel_sunset

Happy New Year everyone! I hope you all had a safe a happy holiday, and are enjoying the last moments of holiday bliss before heading back to work, school and regular routines. I was able to have a Christmas with both my mom and my dad this year, which made me incredibly grateful beyond words. It's a good thing I got some fun times in these past few weeks, because the next couple of weeks are going to be a challenge. On Wednesday I'm having an arthroscopic knee surgery, followed by 2 weeks of … [Read more...]

Veggie pasta & homemade pesto

Thank you all for your sweet comments on my last post! Getting grandma into gear with healthier eating habits has been quite a rewarding experience (in just a week!). So far she is really sticking to the meal plans and snacks I've suggested (although I've still given her a lot of freedom to make her own choices). She's also doing a great job with her food journals! We sit down every few days and go over her food groups. She has increased her veggies and whole grains by several servings each day, … [Read more...]

Developing healthier eating habits

healthy-eating-plate-460

So I have a new project under my belt. My grandparents are back in town for the winter and I am working with my grandmother on developing healthier eating habits. Easier said than done. Changing over from a diet rich in heavily processed foods to a whole foods plant-rich diet takes a lot of work, dedication and drive. It also takes some pretty strong willpower. It's so easy for some of us healthy living bloggers to say "put down the cookie and pick up an apple, duh!" But when a person … [Read more...]

Guest Posting on Frosting for the Cause

tshirt

Hey guys! Come check out my guest post on Frosting for the Cause, along with a yummy recipe for vegan cherry and maple cookies! October is breast cancer awareness month and there isn't a more perfect time to acknowledge the hundreds of thousands of people around the world suffering from this terrible disease. Part of my agreement with Frosting for the Cause is that I'll be donating these cookies to a local cancer hospice. This first batch disappeared quickly in my house so I'll be making 4 … [Read more...]
