Happy Fall!

Happy fall! I think I'm like every other healthy living blogger out there, because I'm positively obsessed with all things fall---including pumpkin recipes, fall weather, comfy sweaters and boots, fall baking, the smell of cinnamon and nutmeg in my kitchen, fall decorations and the anticipation of Christmas around the corner. Fall is definitely my favorite time of year! Although Florida weather is still quite hot and sticky. I've been able to pull a few decorative scarves out of my closet, but … [Read more...]

Cinco de Mayo libations & celebrations

333

This weekend was celebratory! College graduates around the country finally celebrated their years of hard work paying off, followed by plentiful Cinco de Mayo Festivities! You couldn't ask for a more celebratory weekend! ;) My sweet and beautiful cousin Sarah graduated this weekend. So proud of her! After catching up on numerous chores and work, I headed to Tampa for the weekend to celebrate Cinco de Mayo (and our semester being over!) with my sweetie. We hit up Ceviche restaurant in … [Read more...]

Crockpot saves the day

There is something about the smell of a crock-pot meal wafting through the house that just makes me smile. In my humble opinion, the crock pot is pretty much the most ingenious invention ever. Dump everything into a pot, add water, a few spices, turn on a switch... and walk away! In a few short hours the sweet aromas fill the room. Crock pot meals come in especially handy when cooking a full meal is too time consuming and practically out of the question. Did I mention it's cram for finals week? … [Read more...]

Chocolate green monster smoothie

Do you ever wake up with a sweet tooth? Sometimes I wake up and crave something sweet and even chocolatey... so what's a girl to do? Reach for a sugary processed chocolate-flavored cereal? I don't think so! That's where a chocolatey smoothie comes into play. And believe it or not this baby is still packed full of protein, fiber, nutrients and... pssst... spinach! Chocolate Green Monster 3 c. fresh spinach 1 c. nondairy milk 1/2 c. soy vanilla yogurt 1 tbs. flax seed oil 2 … [Read more...]

Since fall is in full swing now, it's officially hot soup season! Don't get me wrong, I enjoy soup all year round, but there is something about cooler weather that makes a warm bowl of soup that much more enjoyable. And believe it or not since my last post the weather has finally started to cool down a bit here in Florida. Thank goodness! The day I can wear boots and a sweater I'll be happy. But for now, I've started exploring some soup recipes to get me in the autumn spirit. The first step … [Read more...]

Miso soup and fresh ginger root

Miso soup and fresh ginger root

Tonight ended up being a very relaxing and enjoyable night. After finishing up a big presentation in school I came home, flopped on the couch, warmed up some leftovers and indulged in one of my fav shows--Glee! Yes, I said it, I'm a Gleek. I've said it before and I'll say it again. The show reminds me of the musicals and performances I took part in when I was a kid, and what can I say, I love the singing, the choreography and the slightly-ridiculous-yet-still-humorous plots. Plus Lea Michele is … [Read more...]

Miso Soup

Miso Soup

So I have been feeling a little under the weather. I had a rough cold right after Christmas and through New Years and I don't think my body truly purged it because it snuck up on me again a few days ago. The weird part is I have not been sick in almost a year. I owe that to my healthy diet and lifestyle. But when I do get sick I try to stay away from over the counter drugs and antibiotics because I believe in my body's ability to naturally heal itself. I am not saying I will never take medicine … [Read more...]

Mushroom and Wild Rice Soup

Mushroom and Wild Rice Soup

After my Minnesota holiday vacation, I arrived home in sunny Florida with a pack of Minnesota Wild Rice--thanks to my grandmother--a delicious whole grain that I was dying to cook up in a yummy casserole or soup. I found a great recipe in Veganomicon (great new Vegan cookbook I picked up a few months ago) and decided to give it a try. Now, I am used to a cream-based wild rice soup that my mother and grandmother have been making for years, and although I love this tasty version I have been on a … [Read more...]
