Happy Fall!

Happy fall! I think I'm like every other healthy living blogger out there, because I'm positively obsessed with all things fall---including pumpkin recipes, fall weather, comfy sweaters and boots, fall baking, the smell of cinnamon and nutmeg in my kitchen, fall decorations and the anticipation of Christmas around the corner. Fall is definitely my favorite time of year! Although Florida weather is still quite hot and sticky. I've been able to pull a few decorative scarves out of my closet, but … [Read more...]

A lil prep work

lunch

It's been three weeks since our getaway weekend in Ocala, and each week has been jam packed for me. My work and school schedule is probably the craziest it's ever been this fall semester! I'm working more hours at the accounting firm, and taking four night classes during the week. So each day is pretty much a 7 am wakeup, head to work by 8:30, go straight to class after work, and finally head home around 9:30 pm. It's a bit insane! I'm trying my best to keep up my healthy eating habits and hit … [Read more...]

Sesame Ginger Cabbage Slaw

photo

This coleslaw is mostly raw, packed full of delicious cancer-fighting nutrients, fiber and protein-packed edamame. It has an orange juice, ginger and vinaigrette dressing that leaves it low-fat and low calorie. It's also gluten free and mostly raw. This recipe is amazing. I sort of threw everything together one afternoon for a refreshing low-fat coleslaw, and I discovered it to be even better tasting after marinating in the fridge overnight. Enjoy! Vegan Chocolate Banana Muffins

RipeBananas-1-copy

I am a huge fan of bananas. It's safe to say I enjoy a banana or two every day. Whether it's for a quick on-the-go snack, added to smoothies, smothered in nut butter, whipped up in the food processor for banana soft serve, added to chia pudding, or snuck into baked goods... I'll put a lil nana in just about anything! But I'm kinda weird when it comes to bananas. I do not enjoy them very ripe. In fact, I prefer them with a lil green around the edges, and absolutely no brown spots! blah! But … [Read more...]

Love the Life You Live

Is it just me or is summer really flying by? I can't believe July has nearly passed us already! It's more than halfway over and I wish it would never end. The only thing I'm happy to see out of my sight is summer school! We've had some very humid and hot weather here in Florida, but we've also had a lot of rain which helps to cool things down. My sweeti and I spent all of last weekend enjoying the beach and having our own little "staycation". We headed down to Longboat Key, for an ocean swim and … [Read more...]

A relaxing fourth of July

mexicanfood

Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! All of my family is up North this time of year, so I'll be having my own quiet holiday (darn summer school kept me from getting up to Minnesota until August. bah!) But I am actually savoring a little relaxing solitude today. I just finished a huge accounting exam, so I can actually breathe for a few days until the new material starts. I finally found my nemesis in the accounting … [Read more...]

My Ode to Sriracha Sauce

sriracha

Beautiful color. Beautiful bottle. Beautiful name. Amazingness. Who, me? Why yes, you, my dear Sriracha sauce. My lover. My friend.  I will slap this stuff on pretty much anything that hits my plate if the bottle is within my arm's reach. It's delicious on rice and veggies, sandwiches, wraps, in soups, drizzled over pizza, sushi and salads... you name it, I've tried it. My younger brother Matt is equally obsessed. I think I've even seen him put it on pancakes before. … [Read more...]

Summer School I Abhor You

brunch

Summer school has begun... dun dun dun. And I have senselessly packed my summer schedule with more classes than I can realistically handle. But alas, too late now, I'm just going to give it my best shot and run with it. Summer school is crazy because they pack an entire semester (about 16 weeks) worth of material into a condensed summer period (6 to 10 weeks, depending on the course). So instead of 1 or 2 chapters a week, each class covers 2, 3 or even 4 chapters a week. A WEEK! Oh yes, and … [Read more...]

Cinco de Mayo libations & celebrations

333

This weekend was celebratory! College graduates around the country finally celebrated their years of hard work paying off, followed by plentiful Cinco de Mayo Festivities! You couldn't ask for a more celebratory weekend! ;) My sweet and beautiful cousin Sarah graduated this weekend. So proud of her! After catching up on numerous chores and work, I headed to Tampa for the weekend to celebrate Cinco de Mayo (and our semester being over!) with my sweetie. We hit up Ceviche restaurant in … [Read more...]

Movin’ on up!

Oh Blog land I've missed you these past few weeks... What happens when you leave your Mac pro charger at your boyfriend's house up in Tampa on a Sunday night? Well, I'll tell you what happens. Your Mac pro dies around Monday evening and sputters its last lil breath. And then you are without your precious laptop until the following weekend when you can venture back up to Tampa to see your sweetie and reclaim your laptop charger. Story of my life. I hated being without my laptop all week, … [Read more...]
