New cookbooks & lychee fruit

A few weeks back I finally scooped up the new Oh She Glows Cookbook and I haven't been able to put it down since! Angela's recipes are so creative and tasty, even my hubby is loving these vegan eats! I finally experimented with cashew cream pasta sauce, and found a new favorite homemade veggie burger. After pouring over every single recipe in this book I ended up playing around with her sauces and dressings most of all. Who doesn't love a tasty and healthy dressing to slather all over a big bowl … [Read more...]

Vegan Chocolate Banana Muffins

I am a huge fan of bananas. It's safe to say I enjoy a banana or two every day. Whether it's for a quick on-the-go snack, added to smoothies, smothered in nut butter, whipped up in the food processor for banana soft serve, added to chia pudding, or snuck into baked goods... I'll put a lil nana in just about anything! But I'm kinda weird when it comes to bananas. I do not enjoy them very ripe. In fact, I prefer them with a lil green around the edges, and absolutely no brown spots! blah! But … [Read more...]

Cinco de Mayo libations & celebrations

This weekend was celebratory! College graduates around the country finally celebrated their years of hard work paying off, followed by plentiful Cinco de Mayo Festivities! You couldn't ask for a more celebratory weekend! ;) My sweet and beautiful cousin Sarah graduated this weekend. So proud of her! After catching up on numerous chores and work, I headed to Tampa for the weekend to celebrate Cinco de Mayo (and our semester being over!) with my sweetie. We hit up Ceviche restaurant in … [Read more...]

Star fruit in all its glory

After work today I decided to swing by the Famer's Market to snag some fresh fruit! I've become quite a fruit-eater lately. (Like multiple times a day, everyday.) I suppose it's because fruit is so easy to carry along to work or school for a snack, and the natural sugar content is a great pick-me-up during the morning and throughout the day. Plus it's so darn good for you it's ridiculous. When I'm buying fruit I try to go with what's fresh, local and in season. I grabbed a giant Florida … [Read more...]

Homemade Sangria

Homemade Sangria

Sangria is... well let me tell you what Sangria is.Fabulous.Sweet.Refreshing.Fruity.Delish.Party Drink.Just what I needed tonight. As I mentioned earlier, I enjoyed a wonderful girl's night in with my best girlfriend tonight. We talked about her wedding planning, dined over fabulous food (I made another batch of sesame seared eggplant with braised leeks), and knocked out her bridal shower invitations. I haven't gotten one quite perfect yet, but I'll post some crafty pictures later.I felt like … [Read more...]

a little birthday bliss

I celebrated my 27th birthday on Monday. Woooooosh did that creep up on me. Last time I checked I was in my mid twenties and now I'm slowly approaching my late twenties. EEEEEEk! Okay, I'll calm down. Worse things have happened.. I'm sure. :) Although now I'm back home in sunny Florida, I spent my birthday with my sweetie in Colorado. We don't usually go out to eat when I visit. Mostly because it's so darn comfy staying holed up inside, enjoying a bottle of wine together, and cooking our own … [Read more...]

Hot Totties

So, because I have the luck of the Irish blood that runs through my skin, I suppose that is why God gave me this wretched cold AFTER Christmas and BEFORE New Years and hopefully not during either of the two holidays :) Either way, I felt it coming on yesterday and I woke up feeling utterly wretched. To make matters worse I am spending the week with my boyfriend's family in Northern Illinois and away from home. Being sick is always a million times worse when you're away from home. But my man and … [Read more...]
