Ch-ch-ch-Chia!

DSC04929

For awhile now I've been a skeptic of the chia seed. I've read about all the amazing nutritional stats in these lil buggers and I've wanted so badly to like them. But up until today, they were still mediocre in my book. Sure, I'd toss them into smoothies and sprinkle them over oatmeal once and awhile for that boost in Omega-3s, Protein, Calcium, Fiber and a plethora of other vitamins and nutrients. But they never wowed me.And sometimes they even bothered me. Can we say chia seeds stuck in the … [Read more...]

Birthday party fruit cobbler!

Happy birthday lil bro! Last night we celebrated my brother Matt's 25th birthday at the cabin here in Crosslake, MN. He's told me it's turning into a habit that he celebrates every birthday while on vacation up north. But at least we celebrate in style! ;)Matt's birthday dinner of choice: Pan seared Walleye fillets with mushroom wild rice, and grilled veggies. My brother and grandparents. My dad and step-mom (middle) & Aunt and UncleWhere it all began: my grandfather and his 2 brothers, with … [Read more...]

Sweet roasted beets for dinner!

Sweet roasted beets for dinner!

I've had a beet in my fridge for a month. Yes a whole month! And I ate it tonight. Hmmm... I didn't realize root vegetables could last so long to be honest. And trust me, I looked it over beforehand. But no worries, no mold! To be on the safe side, I roasted it up in the oven instead of juicing it :) I blame my man-cave of a fridge for keeping it in hiding. My friends and family always tease me about my overloaded fridge and pantry. First of all, I'm usually pretty heavily stocked. Secondly, I … [Read more...]

Berry Crumble Pie and Gardening Highlights

Berry Crumble Pie and Gardening Highlights

Whenever I'm out in Colorado I do a lot of baking. Mostly because my man-hunk has a bit of a sweet tooth, and I have lots of extra time on my hands, so what better way to spend it than in the kitchen? ;) Yesterday I whipped up a delicious berry crumble pie, that turned out moist, sweet, slightly tart and delicious. I used whole wheat pastry flour for the crust and agave nectar to sweeten. There are a plethora of articles out there dissing agave syrup, claiming that it's still a processed sugar, … [Read more...]

Homemade marinara and vacation R&R

Homemade marinara and vacation R&R

Up until a couple of years ago, I was an avid fan of store-bought marinara sauce. Its easy, it's decently good, and it sure beats the work of the homemade variety. But the really good organic jars are kind of pricey. That's when I discovered that it's pretty easy, and a lot cheaper, to make your own "slightly-homemade" marinara using jars of plain organic tomatoes and some trimmings. Plus, the taste is sooo much better than anything store-bought. This is my go-to recipe for homemade marinara. … [Read more...]

pineapple upside-down cake

pineapple upside-down cake

Since the bridal shower, everyone has been asking me for my vegan pineapple upside-down cake recipe! This cake turned out super moist and delicious, and to be perfectly honest, I enjoyed it more than the cupcakes! I would make this again for any special occasion or dinner party. I used whole wheat pastry flour and very little oil, so the cake is pretty healthy, compared to your average dessert. There is definitely some sugar but I opted for the less processed brown sugar and agave syrup to … [Read more...]

Mother’s Day yummies!

Mother's Day yummies!

Happy Mother's Day to all of the amazing moms out there. I know my mama isn't the only amazing one, although she's pretty fantastic ;) I was blessed to celebrate this Mother's Day with my mama, grandparents, my great aunt and my youngest brother Jay. Everyone gathered at the house and we had a fabulous feast. My mom brought over two huge lasagnas, one meat (to make grandpa happy) and one veggie. It was almost vegan except for a little bit of cottage cheese, but I dug in anyway and enjoyed every … [Read more...]

Crafting in the kitchen

Crafting in the kitchen

So I have been doing a lot of cooking this week in celebration of being out of school for a bit. By the way, I did sign up for some online summer courses and start those up next week. lol ridiculous, I know, so much for a break! But I'm trying to get things done as quickly as possible since I just hit the ripe lil' age of 27, and I'd prefer not to be in college forever. The way things are going I should finish my MBA before I'm 30 :) Crossing my fingers at least ;) Anyway, back to food … [Read more...]

Put the carrot in the coconut…

Put the carrot in the coconut...

... and shake it all up! ;)I realize the blogosphere has been quite speckled with carrot-cakes eats this week, but alas, I haven't gotten my lil mini carrot cake muffins recipe posted yet so I might as well throw it out at the last minute.Although I came across LOTS of yummy carrot cake treats on my blog surfing, I decided to make up my own recipe for this one because I wanted to do something different. I've been cooking a lot with coconut oil in the past few weeks, as I mentioned in a previous … [Read more...]
