New cookbooks & lychee fruit


A few weeks back I finally scooped up the new Oh She Glows Cookbook and I haven't been able to put it down since! Angela's recipes are so creative and tasty, even my hubby is loving these vegan eats! I finally experimented with cashew cream pasta sauce, and found a new favorite homemade veggie burger. After pouring over every single recipe in this book I ended up playing around with her sauces and dressings most of all. Vegan Chocolate Banana Muffins


I am a huge fan of bananas. It's safe to say I enjoy a banana or two every day. Whether it's for a quick on-the-go snack, added to smoothies, smothered in nut butter, whipped up in the food processor for banana soft serve, added to chia pudding, or snuck into baked goods... Summer School I Abhor You


Summer school has begun... dun dun dun. And I have senselessly packed my summer schedule with more classes than I can realistically handle. But alas, too late now, I'm just going to give it my best shot and run with it. Summer school is crazy because they pack an entire semester (about 16 weeks) worth of material into a condensed summer period (6 to 10 weeks, depending on the course). After work today I decided to swing by the Famer's Market to snag some fresh fruit! I've become quite a fruit-eater lately. (Like multiple times a day, everyday.) I suppose it's because fruit is so easy to carry along to work or school for a snack, and the natural sugar content is a great pick-me-up during the morning and throughout the day.
