Love the Life You Live

Is it just me or is summer really flying by? I can't believe July has nearly passed us already! It's more than halfway over and I wish it would never end. The only thing I'm happy to see out of my sight is summer school! We've had some very humid and hot weather here in Florida, but we've also had a lot of rain which helps to cool things down. My sweeti and I spent all of last weekend enjoying the beach and having our own little "staycation". We headed down to Longboat Key, for an ocean swim and … [Read more...]

A relaxing fourth of July

Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! All of my family is up North this time of year, so I'll be having my own quiet holiday (darn summer school kept me from getting up to Minnesota until August. bah!) But I am actually savoring a little relaxing solitude today. I just finished a huge accounting exam, so I can actually breathe for a few days until the new material starts. I finally found my nemesis in the accounting … [Read more...]

Merry Christmas Cabbage & Kale

I think God had a sense of humor the day he created the pomegranate. I've never in my life experienced such a sweet, juicy and delectable fruit... that was so absurdly difficult to get at. (Although the coconut ranks high up there too). But all the hard work and time is usually worth it in the end. Health benefits of the pomegranate: Pomegranate seeds contain high levels of flavonoids and polyphenols--some pretty powerful antioxidants that fight free radicals and protect us … [Read more...]

Marinated Cauliflower

Hello blog world! I've been MIA this week because I was sort of in a blogging funk, so I decided to take some time away. And I'm okay with that! But I'm such a hypocrite because when some of the blogs I stalk love take a break from blogging, I'm always thinking come on, post already! So you see, it's a double-edge sword. But I digress... Even though fall is here, it still feels like summer in Florida. It's hot and muggy and I'd do just about anything to trade places with one of you all up … [Read more...]

Crispy Sweet Potato Fries

After several days of my nose being glued to my books, I've finally come out of my shell and back to reality! Three tests in three days, and each test was 1/3 of my grade for the entire class. How's that for freakishly annoying prime numbers? Arg! But there is a calm after the storm and I'm trying to ease into it. I had my bff girl over for a dinner and a movie night for some de-stressing! I made these freakin' fabulous pull-me-out-of-my-funk sweet potato fries that you really must try. I … [Read more...]

After you get … [Read more...]

To like or to love? Kale is the question.

To like or to love? Kale is the question.

Raw, steamed, baked, sauteed, juiced, added to smoothies, soups, casseroles... Kale is quite versatile. Yet it's one of those veggies where I always have someone pull me aside at the market and ask What exactly do you do with that stuff?I do LOTS of stuff! :) I often enjoy kale raw, via smoothie, juicing or salad if I can. It's full of so many vitamins and nutrients and I know I'm getting the maximum amount of live enzymes with raw anything. BUT kale is a little tough and it doesn't appeal to … [Read more...]

Sesame crusted eggplant with braised leeks

Sometimes I pop out a recipe that leaves me thinking, Eureka! I can't believe I just did that, and it turned out sooo freakin' fabulous! Yeah I said sometimes, not always... but tonight was one of those sometimes moments :)I raided my mothers fridge and pantry and pulled out the following: 1 large eggplant, some leeks, garbanzo bean flour (sounds strange, i know, but I was excited to try it) and a jar of organic marinara sauce. Here is what I came up with. My initial inspiration was something … [Read more...]
