Happy fall! I think I'm like every other healthy living blogger out there, because I'm positively obsessed with all things fall---including pumpkin recipes, fall weather, comfy sweaters and boots, fall baking, the smell of cinnamon and nutmeg in my kitchen, fall decorations and the anticipation of Christmas around the corner. A relaxing fourth of July


Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! Happy Easter Weekend


Happy Easter! I can't believe we just finished Easter weekend! Spring has flown by and now summer is peaking around the corner. Christmas dinner at Mom’s


Tonight is Christmas dinner at mama's house! I came over bright and early to start baking and helping out in the kitchen. I whipped up a vegan pineapple upside-down cake, and a variation on my chocolate banana bundt cake for dessert tonight. This bundt cake has a Christmasy twist, or as my mother would say, "Christmasish" <--- her favorite word. Farmer’s market visit


The fall semester is over and things are also winding down with work, so I'm finding myself with more free time on my hands than I'm used to, but absolutely loving it! Crockpot saves the day


There is something about the smell of a crock-pot meal wafting through the house that just makes me smile. In my humble opinion, the crock pot is pretty much the most ingenious invention ever. Dump everything into a pot, add water, a few spices, turn on a switch... and walk away! In a few short hours the sweet aromas fill the room. I've had a beet in my fridge for a month. Yes a whole month! And I ate it tonight. Hmmm... I didn't realize root vegetables could last so long to be honest. And trust me, I looked it over beforehand. But no worries, no mold! To be on the safe side, I roasted it up in the oven instead of juicing it :) I blame my man-cave of a fridge for keeping it in hiding. Since the bridal shower, everyone has been asking me for my vegan pineapple upside-down cake recipe! This cake turned out super moist and delicious, and to be perfectly honest, I enjoyed it more than the cupcakes! I would make this again for any special occasion or dinner party. I used whole wheat pastry flour and very little oil, so the cake is pretty healthy, compared to your average dessert.
