A lil prep work

It's been three weeks since our getaway weekend in Ocala, and each week has been jam packed for me. My work and school schedule is probably the craziest it's ever been this fall semester! I'm working more hours at the accounting firm, and taking four night classes during the week. So each day is pretty much a 7 am wakeup, head to work by 8:30, go straight to class after work, and finally head home around 9:30 pm. It's a bit insane! I'm trying my best to keep up my healthy eating habits and hit … [Read more...]

Sesame Ginger Cabbage Slaw

This coleslaw is mostly raw, packed full of delicious cancer-fighting nutrients, fiber and protein-packed edamame. It has an orange juice, ginger and vinaigrette dressing that leaves it low-fat and low calorie. It's also gluten free and mostly raw. This recipe is amazing. I sort of threw everything together one afternoon for a refreshing low-fat coleslaw, and I discovered it to be even better tasting after marinating in the fridge overnight. Enjoy! Sesame Ginger Cabbage Slaw by … [Read more...]

A relaxing fourth of July

Happy 4th of July! I hope everyone is having a wonderful holiday, and relaxing and enjoying time with loved ones! All of my family is up North this time of year, so I'll be having my own quiet holiday (darn summer school kept me from getting up to Minnesota until August. bah!) But I am actually savoring a little relaxing solitude today. I just finished a huge accounting exam, so I can actually breathe for a few days until the new material starts. I finally found my nemesis in the accounting … [Read more...]

This is what happens…

This is what happens when a greens-lover discovers a local hydroponic picking farm with all-you-can-pick greens. She goes buck-wild. And the last time I did anything buck wild was probably college, so that's saying a lot. ;) I used to buy greens by the bunch. Now I hoard buy them by the pound. At around $1.50 a pound, I stock up until my little heart is content. Since the farm is about an hour drive for me, I'm sticking to bi-weekly trips. And this time around guess what was finally … [Read more...]

Sweet Barley Salad

One of my favorite indulgences is stopping by Whole Foods  for a quick lunch in between work and classes. I love it because I know their standards for quality whole foods ingredients, and it's pretty darn easy to find some delicious vegan and vegetarian options. As it so happens our local WF is smack dab in the middle of my school campus and my new internship, so you can see how I'm easily swayed. But my wallet is having trouble keeping up with my cravings, so I decided to make some of the … [Read more...]

Eating enough & healthy snacking

How does it make you feel when somebody tells you, you don't eat enough, or how can you eat so much!? Does it make you feel like you want to curl up in the fetal position and pick at the carpet in the corner of the room? Yeah, well that's how it makes me feel. Part of me wants to scream It's none of your damn business! And the other part of me wants to whimper if only you knew how much I have struggled with intuitive eating over the years... then you'd leave me alone. ::::sigh:::: I feel like … [Read more...]

Cucumber Pear Juice & Siesta Lentil Salad

Now that I'm home from vacation, I am back to my daily juicing! (Something I missed terribly). I never thought I'd get so attached to my juicer but I sure do love that thing. I juice because I want to. I can. And I love it. Drinking fresh juice once or twice a day is a perfect energy and nutrient boost. I came up with a super simple and amazing combo yesterday. Cucumber, pear and lemon juice. Yep, it's that easy. I used 2 cukes, 2 pears, and juice from half a lemon. It comes out a … [Read more...]

Falafel patties and new shoes!

Falafel patties and new shoes!

I made some really yummy falafels a few weeks ago, after whipping up an eggplant hummus recipe for a guest post. (coming soon on one of my fav blogs and I'll let you know once it's up!) I had an exorbitant amount of freshly made hummus and I knew there was no way I could eat all of it within the week, so I threw in some bread crumbs, onions and spices, and pan-seared a few falafel patties. They turned out really delicious!First of all, what is a falafel? A falafel is a patty made from ground … [Read more...]

Online shopping and Stir-fry eats

Online shopping and Stir-fry eats

Today I happily answered the doorbell to the UPS man! Yay! Packages! Love, love, love :) I was anxiously awaiting the arrival of my latest Ruelala purchase. First of all, if you haven't heard of Ruelala, shame on you! It is an online shopper's dream. They feature a select few designer boutiques each and every day with a limited number of items but at major discount prices. By limited number I mean the boutique opens at 11 am and sometimes popular items can be sold out by 11:30 am. But they tell … [Read more...]

Wrap it up!

Wrap it up!

I decided to take a stab at a few new recipes this week. First I made a delicious cold-pressed cabbage salad. I got my idea from The Kind Life initially and altered it a bit to fit what I had on hand. It turned out SOOOO delicious! Also it's mostly raw so that is an added bonus. I added some toasted ramen noodle at the end for a little crunch but you could leave that out to make it completely raw. Pressed salads are packed full of enzymes and nutrients. The dressing is vinegar-based, which aids … [Read more...]
